For the Vegetables
  • 1 medium Onion Shallots can substitute.
  • 1 cup Bell Peppers Any bell pepper works; poblano adds spice.
  • 1 cup Kimchi Use store-bought or homemade.
For the Assembly
  • 4 rolls Hoagie Rolls Opt for toasted rolls for crunch.
  • 8 slices Cheese Provolone or American is traditional.

Method
 

Preparing the Dish
  1. Thinly slice the beef sirloin against the grain into strips around 1/4 inch thick. Chop one onion and a few bell peppers into bite-sized pieces.
  2. Combine soy sauce, sesame oil, minced garlic, and sugar in a mixing bowl, stirring until the sugar dissolves. Add beef and coat thoroughly in the marinade. Let it sit for at least 15 minutes.
  3. Heat a skillet over medium-high heat with a drizzle of vegetable oil, then add the chopped onions and bell peppers. Sauté for about 5 minutes until tender and caramelized.
  4. Add the marinated beef to the skillet and cook for about 5 minutes, stirring occasionally until browned and cooked through.
  5. Mix in the chopped kimchi and sauté everything together for an additional 2 minutes.
  6. Place the beef and kimchi mixture into toasted hoagie rolls. Top with cheese and broil for 2 minutes until melted and bubbly.
