Preparing the Dish
- Thinly slice the beef sirloin against the grain into strips around 1/4 inch thick. Chop one onion and a few bell peppers into bite-sized pieces.
- Combine soy sauce, sesame oil, minced garlic, and sugar in a mixing bowl, stirring until the sugar dissolves. Add beef and coat thoroughly in the marinade. Let it sit for at least 15 minutes.
- Heat a skillet over medium-high heat with a drizzle of vegetable oil, then add the chopped onions and bell peppers. Sauté for about 5 minutes until tender and caramelized.
- Add the marinated beef to the skillet and cook for about 5 minutes, stirring occasionally until browned and cooked through.
- Mix in the chopped kimchi and sauté everything together for an additional 2 minutes.
- Place the beef and kimchi mixture into toasted hoagie rolls. Top with cheese and broil for 2 minutes until melted and bubbly.
