  1. Begin by greasing a 9x9-inch baking pan with a light coat of butter or lining it with parchment paper for easy removal later.
  2. In a large saucepan, melt 4 tablespoons of unsalted butter over low heat, stirring occasionally.
  3. Stir in 4 cups of mini marshmallows and 1 cup of lemon-flavored mini marshmallows over low heat until completely melted.
  4. Remove from heat and stir in 2 tablespoons of freshly grated lemon zest.
