Step‑by‑Step Instructions
  1. In a medium saucepan, combine raspberries, sugar, and vanilla extract. Simmer over medium heat for 5–8 minutes, stirring occasionally. Once thickened, strain through a fine mesh sieve to remove seeds.
  2. In a large mixing bowl, beat cream cheese until smooth. Gradually mix in sugar, followed by egg and vanilla extract, blending until creamy.
  3. In a separate bowl, whisk together flour, cocoa powder, and salt. In another bowl, mix coconut oil, granulated sugar, and vanilla until well combined. Gradually incorporate dry ingredients into wet mixture, then add eggs, mixing just until combined.
  4. Line an 8x8 inch baking pan with parchment paper, and preheat oven to 350°F (175°C). Pour the brownie batter into the prepared pan, spreading it evenly. Layer the cheesecake mixture on top, and swirl in raspberry sauce.
  5. Bake for 30–35 minutes. The center should jiggle slightly when ready. Allow to cool completely before refrigerating for at least 2 hours.
  6. After chilling, use a heart-shaped cutter to cut out brownies.
