Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine minced garlic, thyme, rosemary, olive oil, and a splash of lemon juice to create the herb mixture.
  3. Season the chicken breasts with salt and pepper, then rub the herb mixture all over the chicken.
  4. Bake the seasoned chicken in the preheated oven for 25-30 minutes, until the internal temperature reaches 165°F (75°C).
Mashed Potatoes
  1. While the chicken bakes, wash and peel the russet potatoes, cutting them into cubes.
  2. Boil the potatoes in salted water for 15-20 minutes until fork-tender.
  3. Drain the potatoes, then mash them with butter and milk until smooth.
Glazed Carrots
  1. In a medium saucepan, melt butter over medium heat and add brown sugar and honey.
  2. Add sliced carrots to the glaze mixture and toss to coat, cooking for 10-15 minutes until tender.
