  • 1 cup Coconut Milk Coconut cream can be used for a richer texture
  • 1 cup Heavy Cream Replace with full-fat coconut milk for dairy-free
For the Setting
  • 4 sheets Gelatin Sheets Agar-agar works as a vegan alternative
  • 2 tablespoons Pandan Powder Ensure it’s pure pandan powder, no additives
For Garnish
  • 1/4 cup Shredded Coconut Fresh fruit or edible flowers can be added as garnish

Method
 

Step-by-Step Instructions
  1. In a medium saucepan, combine whole milk and granulated sugar, then heat gently over low to medium heat until the sugar is dissolved.
  2. In a small bowl, mix 55g of the heated milk with pandan powder until smooth, then return to the saucepan.
  3. Soak gelatin sheets in cold water for 5-10 minutes.
  4. Heat the milk mixture to around 50°C (122°F), then remove from heat.
  5. Add soaked gelatin sheets to the warm milk mixture and stir until dissolved. Then stir in coconut milk and heavy cream.
  6. Strain the mixture through a fine mesh sieve into a clean bowl.
  7. Pour the strained mixture into molds, cover, and refrigerate for at least 4 hours until set.
  8. Unmold the panna cotta and garnish with shredded coconut or pandan leaves before serving.
