- Preheat your oven to 350°F (175°C) and grease your donut pan well.
- In a large mixing bowl, whisk together mashed bananas, maple syrup or honey, oil, and optional vanilla extract until smooth.
- In a separate bowl, sift together flour, baking powder, and salt.

- Transfer the batter into the prepared donut pan, filling each cavity about three-quarters full.
- Bake for 8-10 minutes or until golden brown and springy to touch.
