- In a large mixing bowl, season 1 pound of ground chicken with salt and pepper. Gently mix to distribute seasonings. Divide mixture into four loose balls.
- Preheat a skillet on medium-high heat for about 5 minutes. Add a splash of neutral oil if needed.
- Place the chicken balls in the hot pan and sear for 1-2 minutes without moving. Look for a golden-brown crust.
- Press each chicken ball down firmly with a spatula to form patties about 1/4 to 1/2-inch thick. Cook for another 2-3 minutes.

- Toast the brioche burger buns until golden brown, about 2-3 minutes.
