Step-by-Step Instructions
  1. In a large mixing bowl, season 1 pound of ground chicken with salt and pepper. Gently mix to distribute seasonings. Divide mixture into four loose balls.
  2. Preheat a skillet on medium-high heat for about 5 minutes. Add a splash of neutral oil if needed.
  3. Place the chicken balls in the hot pan and sear for 1-2 minutes without moving. Look for a golden-brown crust.
  4. Press each chicken ball down firmly with a spatula to form patties about 1/4 to 1/2-inch thick. Cook for another 2-3 minutes.
  5. Flip the patties and place a slice of cheese on each. Cover with a lid for 30 seconds to 1 minute to melt cheese.
  6. Toast the brioche burger buns until golden brown, about 2-3 minutes.
  7. Spread mayo on the bottom bun, layer with lettuce, add the chicken patty with melted cheese, top with tomato, pickles, and burger sauce, and crown with the top half of the bun.
