  • 8 ounces Pasta Any shape, cooked al dente
For the Sauce
  • 2 tablespoons Olive Oil Or substitute with butter
  • 8 ounces Mushrooms Cremini or button mushrooms
  • 2 cloves Garlic Minced
  • 4 cups Fresh Spinach Kale or Swiss chard can be used
  • 1 cup Heavy Cream Or half-and-half/coconut milk
  • ½ cup Parmesan Cheese Grated
  • to taste Salt
  • to taste Pepper
For Serving
  • to taste Fresh Basil For garnishing

Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water. Once boiling, cook the pasta until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add mushrooms and sauté for 5-7 minutes until golden brown.
  3. Add minced garlic to the skillet and sauté for 1 minute until fragrant. Then toss in fresh spinach and stir for 2 minutes until wilted.
  4. Pour in the heavy cream, stirring to combine. Allow to simmer and then add Parmesan cheese until melted.
  5. Add the cooked pasta to the skillet and mix to coat with the sauce. Season with salt and pepper to taste.
  6. Remove from heat and garnish with fresh basil before serving.
