Step-by-Step Instructions
  1. Preheat your oven to 350°F (180°C) and grease a muffin tin or line it with muffin liners.
  2. Blend cottage cheese until smooth and creamy, about 1-2 minutes, then pour into a mixing bowl.
  3. Add eggs, melted coconut oil, and vanilla extract to the blended cottage cheese and blend for 30 seconds until light and fluffy.
  4. Mix in protein powder, cocoa powder, coconut flour, sweetener, and baking powder. Blend until smooth without lumps, about 30 seconds.
  5. Fold in chocolate chips using a spatula until evenly distributed.
  6. Spoon the batter into the muffin tin, filling each cup about 3/4 full. Add extra chocolate chips on top if desired.
  7. Bake in the preheated oven for 20-25 minutes until a toothpick comes out clean.
  8. Cool the muffins for about 5 minutes in the tin, then transfer to a wire rack to cool completely.
