- Begin by peeling and dicing your russet or Yukon Gold potatoes into small, even cubes, about one inch in size. In a large bowl, toss them with a drizzle of oil until they're well-coated. Sprinkle generously with salt and a pinch of taco seasoning before transferring them to an air fryer basket, ensuring they are spread out to promote even cooking.
- Next, set your air fryer to 400°F (200°C) and allow it to preheat for about 5 minutes.
- Carefully place the seasoned potatoes in a single layer in the preheated air fryer basket. Cook them for 15 to 20 minutes, shaking the basket halfway through.
- While the potatoes are cooking, heat a skillet over medium heat and add your ground beef. Cook until it’s crumbled and browned, reaching an internal temperature of 160°F (71°C). Once cooked, drain excess grease and stir in water along with remaining taco seasoning, allowing it to simmer until the mixture thickens.
